Guilt-free desserts – Boston
Many healthy chocolate chip cookie recipes that we’ve tried in the past have fallen flat or fallen apart. But these cookies, as you can see from the photo, are fluffy, soft, and oh-so-delicious! Plus, if you store them in an air-tight container, they’ll continue to stay fresh and moist!
The hint of honey in the dough is, in our opinion, even better than regular cookie dough. They even smell like warm honey when they come fresh out of the oven!
So, without further ado, here is our divine and healthy recipe for Honey Dark Chocolate Chip Cookies!
You will need:
1 cup organic wildflower honey
1 cup organic salted butter at room temperature
2 organic, cage-free eggs
1 Tablespoon organic vanilla bean paste
4 cups organic wheat flour
1 teaspoon organic baking soda
½ teaspoon organic baking powder
1 teaspoon organic pink Himalayan salt
2 bags chocolate chips
We use SunSpire Organic 65% Cacao Bittersweet Chocolate Chips, because they use organic cane sugar to sweeten their chips, and let’s face it: 65% cacao is delectable! If you’d like a little added protein, you could add walnuts or pecans. Be sure to toast them first, so that the flavor really comes out and they stay super crunchy.
Sift together the flour, baking soda, baking powder, and salt in a medium bowl. In another medium bowl, use a blender to whip together the honey, butter, egg, and vanilla bean paste. Slowly mix the dry ingredients into the wet. Hand mix in your chocolate chips. Some may prefer less chocolate chips, but who doesn’t love more chocolate, right?
Preheat your oven to 350 degrees Fahrenheit. Allow the dough to sit for about a half an hour. This makes it easier to shape into balls. Spray your baking sheet with olive oil or your preferred healthy alternative to cooking spray. Place rounded balls in even spacing around your baking sheet. They will expand a little bit, but they will mostly puff up.
Bake for 12 minutes or until golden brown. These cookies are very soft and will stay that way if stored correctly.
Enjoy your newfound, healthy treat! Indulge yourself, but be sure not to have to many. Limit yourself to one each day for a dessert so that you don’t overindulge and ruin all of your other healthy choices!
