1 cup freshly baked pumpkin, purreed
1 1/2 cups melted cocnut butter
1/2 cup pure maple syrup
1 tsp. vanilla bean paste
1/2 tsp. cinnamon
1/2 tsp. nutmeg
dash of salt
For coating: organic chocolate chips – 80% cacao or higher.
Combine all ingredients (except chocolate chips) a blender. Roll dough into balls. Refrigerate until firm. Melt the chocolate over the stove, adding a tiny bit of coconut butter to ensure smooth consistency. Dip the chilled pumpkin balls into the chocolate and set on wax paper. Allow to cool. Refrigerate to store.
